Why am I showing this? Dunno....it was a 20 minute job to make, but it sure makes slicing jerky easy :) I've got a freezer full of goose that needs to go into the smoker, so it was about time :dancingbanana:

It's essentially a 3/4" thick piece of hard maple flanked by two strips of cherry. The way it's set up is to have a 1/8" recess between the rails and surface of the maple on one side (for thin jerky) and 1/4" spacing on the other. Pick your thickness, lay your meat flat on the maple, lay your knife across the cherry rails and make the cut. Perfectly even strips every time.

A chunk of maple, two pieces of 3/4" cherry, and a dozen 1 1/2" dowels to make it, a few coats of food grade mineral oil to finish it, and that's it. Hell, these are so simple to make, I should see if I can market 'em :D
