Can anyone lead me toward someone who can assemble the crucial parts of a Garand for me? I think that anything beyond attaching the barrel to the receiver and headspacing the bolt, I should be able to do myself.

The only person I know that could help out is GarandGuy, I think he's based in Edmonton. You'd need to Google him though, because I don't think he's got a presence here.

CGN member L.Parrat has built more than a few. I think he is in Alberta. If you ask nicely, he may help you.
There is also a member somewhere in B.C , but his name escapes me at the moment

My personal experience is with Nick at Vulcan Gun Refinishing in Ontario. A true expert and a real nice guy

Fitting the stock is crucial. You may want somebody with experience to do it properly

L. Parrat, aka Grand Daddy, did some work on mine. Barrel change, cleaned up the stock, and replaced a few springs. Great to deal with and reasonably priced.
