Got a gen 3 glock 17 frame and I really don’t know the difference between the numbers except that a 19 is smaller, so what glock uppers will fit on my 17 frame becides a 17 upper

You can install the 34/35 sized slide. As well as a G22/31. The Gen3 and Gen4 should both be compatible. The G5 is not.

Of course you can also get any G17 Gen3/4 compatible aftermarket slide.

Your 17 frame can accept an Advantage Arms .22lr upper, it can also accept a 17, 17L or 34 slide. You may also be able to accept a 22 or 35 slide but I may be mistaken.

Check brownells online store. I recommend grey ghost precision for aftermarket. There are a lot out there, just make sure you do your research, nothing worse than putting together a Gucci glock to have it fail to extract and light strike every round.

Gucci glock comes later, I want to try and start with a basic upper to get the feel of a glock

Are the 34/35 and 22/31 9mm ? Or something else?

17 and 34 are small frame 9mm, 22 and 35 are small frame .40. The 34/35 are the competition length versions of their respective shorter duty length guns. Longer slide and barrel, longer sight radius, all the differences are in the upper. The frames are no different in the 17 and 34, and the 22 and 35. You can down step a 9mm barrel onto a .40 slide. I can't confirm or deny that the switch works the other way around.
