Interesting discussion - Just to add a relevant point here, the Russian Military seems to have gone from wooden stocked AKs to polymer ones as seen in their newer more recent deployments of troops.

If anyone has had experience using rifles in cold harsh environments - it would be the Russian Military.

well during wwii they did well with wooden stock and most of the winters were cold or very cold.

the polymer (nice word for plastic) is certainly because the maintenance is easier and less work and money involved to produce a stock compared to the wooden ones. we re a few that tried plastic and back to wood or laminated for a reason at least here ...

i ve seen first hand first price stock (plastic or whatever the name) broken in 2 at the wrist when it was cold not every plastic is created the same ...
