I have not been rabbit hunting in 20yrs, but we used to squeeze the rabbit a bit adding a bit of pressure to the rear, and then just give the rabbit a swing in the air, and the insides would all come out the back. Works well.
The perch one is a cool one, I have never seen that. I hope I remember to try it this summer.

I have a WAY faster way of cleaning a perch then he does 
It is simple and you waste zero meat. Fillet the two sides off as usual, but go right through the ribs, flip the fillet over, take your knife and cut right behind the ribs touching the rib cage and angle your knife with the ribs and wahla, you have a tasty boneless fillet, flip back over, put fork on end where tale was, take fillet knife and angle against meat and wahla, skinless and boneless fillet.
Works well with pickreal,bass and perch

I've seen a few guys (OK I tried it too...lol) gut hares the way HeavyBullet described, but someone usually ends up wearing the guts up thier back and over their hat!
As for the perch fillet: Not faster than Northwoodslivin's way + Everywhere I fish, you must leave the tail and usually part of the skin intact untill you get home.

same here....
they claim it takes 10 seconds but looks like it actually takes a minute or so which is how long it takes to fillet and debone.
sometimes its nice to scale them and leave the skin and fins on. gotta love those crunchy tails
