Hanging ungulates

I'm just getting into hunting mammals, having moved north in Alberta.

I think I now have a handle on the post-kill routine, but I am uncertain about how long to hang the carcass before cutting. :confused:

I like my beef hung 21 days, if that's of any value.
 
I have my own cooler and just keep checking the meat.You can pretty well tell when you need to cut it up.Hang it as long as possible as it seems to make a difference in the size and type of animal being hung. I also cut and wrap my own meat.Being different than a lot of folks I leave the hide on as long as possible to keep the meat from drying out.A lot of people do not agree with this but it never seems to bother the meat so until it does I will keep doing it this way.
 
Well, personally, I usually hang em with the head up....either by the neck or the antlers.

You can do it either way really.

Pending how you dress the animal first. If you just field dress him out in the woods (guts out, lungs and heart in), you're best off hanging him with the head up as it's easier to reach up into the chest cavity and pull all the innerds out.

If you completely dress him, you could go either way. Mind you, I find them a little easier to hoist up there by the neck or antlers.

If you hang him feet up, you will need to cut a couple holes through his lower (back) legs where the tendons are, and hang him via hooks or some apparatus.

If it's a moose, well, my suggestion is to quarter him where you shot him and save yourself a lot of aggrevation.

I've dragged a few of these beasts out of the woods now....and I A'INT doing it again....unless it's a really easy trek.

Ok ..... I just answered a question that doesn't exist.... I guess I read through the how long part. Sorry, please disregard my last post.

As for how long?? Got me...I base it on how cold the weather is and how energetic I feel.

I just did up a wild boar a few weeks back, it was "cool" out, but not "cold".
So, he only got hung up for about a day before I stuffed him in the freezer.
 
Man, there's no stead fast rule to this. Everyone has their own "hanging recipe" :p Length of hanging game depends primarily on the temp of where you are hanging it.

I hang my meat for 7 to 10 days. Sometimes less (depends on the boys hockey schedule;) )

Then there is the old bull young bull, the old gets hung longer than the young.

I suggest you experiment from one year to the next with your times. Bottom line is the meat needs to be cool to have time to stretch properly.
 
My Dad used to hang Moose & Deer for two weeks, a little longer if possible, in a cooler:) . Grouseman, I doubt the direction makes any difference. Sort of like cutting the throat, if the heart isn't pumping:rolleyes: ..... But, as an idea, start a new trend, hang it horizontal!
