I'm a little different. You need money. The M 70 would be the easiest to liquidate so it would go. I'd probably keep the 8mm (depending on the rifle and stock).

The mod 70 would be a keeper.
But most importantly......which one appeals or is more comfortable to you ??
Any particular one have any sentimental value??

I'd keep the 303, it would likely fetch the least money and it is the one you describe as beautiful.

Pictures and more details on the rifles and scopes they are sporting may help. I know most are saying keep the model 70 .30-06 and I get why its a great versatile cartridge rifle combo and will do anything you need. I'd lean towards parting with it with what we currently know. Model 70 .30-06's aren't going out of production any time soon, so replacing it when better times return should be doable. Unless it is something unique.
Parting the scopes from the rifles may allow for more dollars to be generated but hard to say. Either way if going down to one rifle I'd keep my best scope for it. Assuming the M98 is a sporter and accurate I'd be thinking about keeping it or the Savage 11.
A properly handloaded 8x57 doesn't give up a much to any of the cartridges listed for moose or bears. A .270 is no slouch either and Savage 11's tend to shoot accurately. I can't bring myself to like most .303's but an accurate one may change my opinion. The 742 is an easy sell choice.

Model 70 in 30-06, while you are reloading for others, this is likely your best and most versatile rifle for all around big game hunting and easiest to pick up dies and components to reload for it.
But only you can decide which rifle you have that means the most to you, and then keep that rifle. Sell the rest to fund your other needs.
As with all material things, they can be replaced. Items with sentimental value get harder to let go and can never quite be replaced.

If the barrel is in good shape; I would go with the Model 70 as well; if not both the 308 and the 270 are great calibers; both will do what ever you need. Mausers and Enfields are classic designs; factory ammo does not give much choice, and bullet selection for reloading is a bit limited.
