Homemade Smokehouse

we had a digital Bradley, but the wind took it right off the deck, broke a door hindge and did some dent damage. so we bought a Big Chief, it was cheap enough to buy and works well. we don't do big batches at a time, so it serves us well. we did have some problems with the Bradley not wanting to feed the pucks consistently! and I did read somewhere that the pucks have some binder in them that may be hazardous to your health if not used properly. I like chips and chunks system much better. the Big Chief is in operation right now as we speak, and it's windy as Hell, so she's ratchet strapped down. doing a couple doz Hi Mountain snack'n sticks.

It's not homemade, but I have an offset, horizontal barrel smoker that gets great results. I switched it to gas from charcoal. I just couldn't get consistent temperature from the charcoal. It works great. I got it on sale at TSC at the end of the season. I made some modifications for better results.

But I started making my own sausage and now I would like a vertical smoker.
I found this plan for a relatively inexpensive one made from plywood.
I'm just gathering materials when I see them on sale and will build it later this spring.
