It's a bit cold outside to do a good smoked sausage so try substituting smoked picnic pork shoulder (the cook and eat stuff) for the fresh pork in your recipe. It's on sale now Christmas is coming so it's cheaper than fresh pork. Just made a batch and it really is great.

p.s. reduce the amount of salt your recipe calls for as these hams are already salted.

I use bacon ends for my sausage,one third bacon two thirds deer/moose etc. Cut back your salt in the recipe at least a third.
