My suggestions (I own 3 EE OUs):
1. Go to a store and try some guns that you might hope to find on EE. For example, it would be useful to know how a Cynergy, Citori, and Beretta 686/7 fit or do not fit you.
2. Consider models with adjustable combs/stocks.
3. Buy what you want, then contact a good gunsmith to get it fit. I used Alain Combes near Montreal to have both of my Berettas fitted for me shooting left-handed. He took 3-4 measurements (of my body dimensions) and then adjusted the LOP (cut the stock), and the drop an cast using steam. On the grand scheme of these kinds of shotguns, the extra 150$ for a shotty that shoots where you look is a small price to pay, IMO.
