My friend gave me quite a few bison roasts last spring and I totally forgot about them in hidden in the back of the freezer. Now i'm wondering how long their good for? They are from his 2010 hunt, they were packaged properly by a licensed butcher and frozen ever since. Would they still be good to eat? Here is a picture, there is some frost on it, is this freezer burn? Is it still eatable?

Eat ,,no worries. If it doesn't smell strong like freezer when you unwrap it it's ok..That may not make sense unless you have unwrapped a forgotten piece of meat and it stinks like? well,, freezer. hard too explain. the bison should be good.

That doesn't look freezer burnt. Freezer burn is when the meat turns straw brown or grey from exposure to air. Even at that, on a valuable piece of meat, I'd just trim off the outer surface and salvage the rest. I'd say your piece of meat is good to go. Read up on how best to prepare it. Lean meats (which I'm assuming Bison is) tends to be dry if overcooked, so avoid cooking it like a greasy pot roast.

I woud be more than willing to cook that piece up. Looks quite fine to me. Usually, freezer burn will turn the meat a "cooked" brownish/beige color - that pic looks like just some hard frost on it to me.

If you are really concerned about it, thaw it first, then cut out the "white" areas in the pic. Freezer burn doesn't "spread" through meat, so anything not discolored should be perfectly fine.

I'll echo what most everyone is saying, it should be good. If you're in doubt just cut 1/2 inch off all surfaces and it'll be brand new. We're eating jerky from some Nov 2010 packs of deer meat that got lost in the bottom of the freezer and you'd never know it.

There are natives on the land in Siberia who find frozen Wooly Mammoths every so often. Apparently they feed the meat to their dogs. No freezer wrap or deep freezes there.

Did someone say frozen Wooly Mammoth tastes like chicken?
