How long to let deer hang?

Even under the best temp. I have not found a difference in taste between a deer hung 2 days or a deer hung 8 days.

I only ever skin an animal if I plan to cut and wrap it the same day. Too much meat loss comes from hanging them without the hide. If it's Sept. I cut and wrap within a day or so. By late Oct - Nov I will leave them for a couple of weeks. ALWAYS hide on though. I don't like jerky at all and don't want any of that flavor on my meat.

All the poeple I know that have shot deer let them hang for 3 days, then off to the butcher they go.
