IMHO, do a community College diploma in machining. Then work for a year or two as a machinist. once you have that skill set, start looking for a gunsmith who will be retiring withn the next 5 years or so and ask to be his apprentice. Highlight your abilities in machining, etc.
In all liklihood he'll hire you as an apprentice with the goal that you will be buying his business from him, along with all the machinery to fund his retirement.
