I've done blasting/refinishing on a few dozen SS pistols and a few SS rifles, and have to say the exact process varies as does the exact composition of the Stainless. Some SS is harder than others, which makes a big difference in the final results
Ruger Revolvers have a softer SS that, when done with soft pressure and well worn glss beads, gives a beautiful, almost pearlescent sheen. 17-4 PH double heat ttreated Randall govt slides are so hard, they literally give off white sparks when blasting. With those I sand blast the top of the slide, then light bead over the top and the polshed sides for a matte finish on the top, and very soft sheen on the sides.
If you use just the sand blast, the pores and edges are so sharp, you can't run an oily cloth over the finish without leaving chunks of lint, which is why I did a second pass with glass beads.
PS: to blend scratches or shiny spots on SS by hand, the various grades/colors of plastic "pot scrubbers" can do a nice job.
IMHO, SS looks best with two tone ... some high lights of polish or different texture.
