I deer hunt and moose hunt maily but, looking into getting into elk hunting next year. Most of my shots are within 250 yards however have shot deer out to 460 yards.

I'd buy a Remington stainless SPS in your favourite chambering, have it tuned up by a good gunsmith and bedded to a good lightweight stock like McMillan.

Add a leupold in good mounts and you're GTG.

Of the choices listed- Rem700 XCR. They aren't made anymore though. Probably wouldn't be hard too find old stock though.

In reality I'd choose none of the above, were it an option. Ruger or Winchester for this southpaw.:)

Good choice I say, dont worry about the recoil, I got a sako A7 in 7mm and its not that bad at all really, worst comes to worst get a limsaver for it as the stock recoil pad is quite stiff.
 
Ruger 77mkII or a CZ. Both make lefties. Got a Ruger SS 30-06 5 yrs ago. Not the prettiest rifle I own but certainly up there on the reliable scale and accurate enough to hunt well.

To the best of my knowledge, CZ does not have a LH offering in a common BG hunting caliber/chambering. They offer the 452 and derivatives in LH for RF, the LH 527 for small bore, and the LH 550 Safari in 375 H&H in very limited (and very expensive) quantities.

The Rugers are no longer being made in SS either. So that's one less choice for us southpaws...:(
