I am interested in exploring the possibilities of collecting a few antique firearms (not sure what yet but the 1860 - 1895 era appeals to me).

Knowledge is the problem (as well as where to find them).

Can anyone provide any recommendations for books or websites so I can learn a bit about this whole topic?

I got ripped off badly on a mixmaster C&B 1850s revolver a few years back and as a result I have shyed away from antiques ever since, but my interest has always been there and I now realize that what I need is knowledge so this problem doesn't happen again.

any advice for books, websites or publications?

I think a very major question is what do you want to collect them for? If you are looking for excellent examples of specific categories, you need to define those categories in your mind and somewhat stick to them. You also should expect to pay a lot of bucks and be counseled by someone you not only trust but who is generally considered to be extremely knowledgeable.
If you want to collect guns you can shoot or which are examples of the craftsmanship of various regions and so forth, then they should cost a lot less and in return be much less pristine and possibly include repairs. Even beaters are of value to some and poor repairs can be upgraded, but more or less it is only economical if you are prepared and capable of doing the repairs yourself.

If I understand what is written above correctly I can just buy these antique firearms from the US and have them shipped to me here in Canada?

Do I need to use a special service to negotiate customs or to import them? This idea sounds very interesting, but I would very much appreciate the details before I start bidding on or buying US antique firearms.
 
The guns need to be considered antiques in Canada as defined by cc 84 1(a) and cc84 1(b) -- SOR 98-464. You would be wise to have that information printed out plus cc 84 3 which says they do not have to be registered. Recognize that the Canadian definitions for antique differ from the US definitions.
Further, do not use a courier to ship them accross the border; most or all couriers will refuse to transport them accross the border. Have the guns mailed to you and have the customs declaration read "antique" or "antique as per cc 84 1(a)"
