...what brand names would/should I look for accessories?

this is exactly what my SAM looks like:

and the contrast of the tan frame vs black bits on the GSG 1911 grabs my attention, so I'd like to find the same in black with the same SS Satin/Matte finish the SAM has.

the thing about adding accessories onto your SAM is that they are hand fitted guns.
so i can pretty much guarantee you that no aftermarket parts will just 'drop in' your gun.
anything you buy your gonna have to either fit it yourself or have a gunsmith do it for you.
now im not saying thats a hard thing, triggers, mag releases, slide release, bushings ect are pretty easy to fit even for a lay person if you have time and some sand paper/files.
but the barrel..... some times those can be tricky.

if it where me and i was gonna do what you where looking to do id call the gunsmith at Wolverine and talk to him about what parts he is using as he does the warranty work for SAM. also, he may well have the parts you are looking for that may fit better.
i know when i had my front site of my SAM replaced with a fiber optic i just sent it to him.

Grips obviously no big deal, but everything else is likely to need fitting on a 1911 requiring either a gunsmith or your patience/tools/willingness to maybe make a mistake.

From all the enthusiastic reports about SAM 1911's I'd say that the next step up for you would be AT LEAST a Remington or Ruger 1911. But that won't be all that much of a step up. To really get into a 1911 that is a big jump up in smoothness, fit, and trigger pull feel you're likely looking at one of the lower models of STI. Or if Kimber has fixed up their spotty quality perhaps one of those.

In terms of "spotty quality" for Kimber it's not that they have actual problems. Just that the trigger feel apparently, from reports, varies with no real consistency. And isn't there something about magazines not feeding? The Kimber I held and looked over at Wholesale a few years ago was nicely fitted with a nice trigger. But I didn't like the, for me, overly aggressive look of the sand or bead blasted finish. Seems a bit too rough. And likely a bugger to keep cleaned due to the texture.

Another gun I really liked the fit and finish of and the trigger on the two I had in my hands are the S&W 1911's. The ONLY thing that puts me off with those is the non traditional extractor. Otherwise the fit and finish is excellent.
