If you only rifles chambered in 2 cartridges, what would they be?

Hypothetically speaking of course. It would have to cover varmint hunting up to moose, open range and brush hunting. I'm thinking 257 bob and 30-06.

I'd keep my Lee-Enfields and my Marlin 795, so that's .303British for big game and .22LR for small, giving up my .223Remington varmint guns (with the interchangeable .308Win barrel for one of them,) my .50 muzzleloader and my .243Win.

I forgot to mention centre fire rifles, I think everyone needs a 22

Oh good. If the .22LR doesn't count, I can keep my Handi-Rifle in .223Remington and my Savage 24F which combines that calibre with 12gauge.

243 seems like a good option too, but I don't think 45/70 would cut it while hunting big game at long distances in cut overs or in the tundra.

Haha, you can have as many shotguns as you want, everybody. Needs at least a 12 and a 410. As far as shotguns go, my 20g semi will always be my favourite. But if I could only have two it would be a 12 and a 410, but lets keep this on topic of centre fire rifles.
