I've used the jerky mixes by High Mountain for years and am going to try these two mixes out. I get a guy I know to make sausage for me and will be getting these done after hunting season. I usually get my sausage mixed 1/3 deer, 1/3 beef and 1/3 pork. It turns out really good at that mixture. He uses Birch to smoke (very much like Alder) and produces excellent sausage every time. It says each box will do 20lbs of meat and they even come with the casings.
