Jack rabbits

How are jack rabbits for eating? I know down in the states many say the meat is very tough, but I think down south they have back-tailed jacks, up here we have white-tailed jacks. Would they be similar to eat?
 
Slow cooker is the way to go. They can be very tough if you dont get that membrane off the meat. The membrane will dry out and become like leather if you try to roast it in the oven.


Jacks are delicious...............mmmmmmmmmmm.....................Jack stew!!
 
Yep get that membrane off the meat and then SLOOOOOOOW cook the bunny.

How I cook me wabbit:

Half pound of bacon cut into 1 inch pieces, fry er up
Brown quartered bunny (bunnies)in same pan as bacon.
Pour everything; bunny, bacon and fat into stew pot
Water, about 6 -8 cups
Throw in some herbs, pepper, garlic and onions
Simmer for a couple of hours
Then cubed root veggies, cook for another 30 minutes.
Make a thickener with a couple of tablespoons of flour and 1/2 cup COLD water. Stir this into everything else
EAT ER UP
 
I miss eating jackwabbits!!
I found if you take the bunny parts and soak them in heavily salted water for 24 hours or so, changing the water a couple of times.
Wrap them in bacon and cook with really low heat, 275-300. BBQ sauce on top just before serving.....scrumpdillyicious!!!:D
 
You'd be pretty tough too if your only purpose in life was to run from everything all day and be prey:D

MMMMM can't beat a brace of rabbits in a slow cooked roaster.:p

The jackrabbits in Western Prairie Canada are the whitetailed jackrabbit. I do not know if the jackrabits in BC are the same species or they could be the blacktailed jackrabbit or the desert dwelling antelope jackrabbit common to many desert US states???
I found the german recipes for haspenpheffer worked really well for the big jack. By the way i beleive southern Ontario has the european hare. The other bush bunnies out here in the west are the varying or snowshoe hare. I do believe some parts of Canada have the nutalls rabbit or commonly called the American rabbit which never changes fur color...
