Your 1860 is cut for a shoulder stock. There should also be two triangular notches in the recoil shield. The stock hooks in there, and rests on the two big screws.
Since I see you're in Winnipeg, did you obtain that Uberti locally? There was a local dealer who had a nice one at a show a while back, and I havent seen it at hsi tables since then.
My 1860 is exactly like that. Blood pressure's dropping now. I was all over the manual trying to find their purpose. I could possibly replace them with grubscrews till I use a stock then?

These are for a buttstock. There should be a small recess machined out of the bottom of the grip strap for the clamp on the buttstock.
Dixie gun works will sell you a butt stock for these guns. They will run about $90 to $100.00.
BTW: Uberti makes one of the best replica B.P. revolvers. Every one from Uberti that I've seen and handled had a very high standard of fit and finish compared to other Italian brands.
