what is involved in rechambering a 303 Lee-Enfield to take 7.62x54R?
both are rimmed cartridges, both use the same diameter bullet [.311"].
is it fairly easy, or more trouble than it's worth?

also, are there chamber adapters made for this purpose?

You could Improve it. .303 Epps/AI could give you some more pop. You'd need to reload of course. Main draw back as I understand it is chamber pressure. The Milsurp forum is a better place to ask. I'm sure you'll get all the details there.
 
It has been done, to take advantage of lower cost 7.62x54R ammunition. If the 7.62 reamer is simply run it, the shoulder portion of the .303 chamber is not cleaned up, and fired cases will look very odd. A proper job would involve setting the barrel back, refitting it, and cutting the chamber.
An adapter is out of the question, because the 7.62x54R case is larger in diameter than the .303.
No idea how the magazine would work.
 
How about altering a bubba'd beyond restoration relic, rather than a No.5? Stratightforeward job to set the barrel back.
 
What would be the point? If you're worried about ammo supply, much simpler and cheaper, to just reload. The cheap Russian ammo is going to dry up at some time, as well.
