lee-enfield sights?

I can't seem to find out anywhere which rifles had peep sights and which ones didnt. and I'm also wondering if the ones without can accept them somehow.

The first production L-E with a peep sight was the Mk.V, which was only made for a couple of years. The earlier Mk.III and III* rifles, and the even earlier long Lee could have A.G. Parker and other peep sights fitted to them for target shooting, but they are rare and expensive today.

The No.4 Mk.1 , Mk.1*, and Mk.2 rifles all had peep sights, as did the No.5 Mk.1 (jungle carbine).

The Pattern 1914 rifle, later called the "No.3 Mk.1", also had peep sights.

If you wish to put peep sights on a Mk.III, you do have a few options, but all are fairly pricey. None of them are particularly rugged, either. Best to buy one that already has the sights you want.
 
Also remember the Enfield rifle was sighted in using a 6:00 hold and was sighted in to be 3 inches high at 100 yards. The exception being the Mk.2 300-600 flip sight that was sighted in 6 inches high at 100 yards. This was with cordite Mk.7 ammunition and modern factory ammunition may shoot to different point of impact.
