Looking for a farmer sausage recipe (venison)

I'm looking for a farmer sausage recipe I can use with deer meat. All I have is the Luhr Jensen Big Chief smoker, so I'll be hot smoking the sausage. Any recipes to fit? I don't want anything hot and spicy, just your typical farmer sausage taste or something with a nice, simple, smoky flavour.

go to canada compound in winnipeg and get a mix. $10 and makes 20 pounds of great sausage.

Farmer Sausage

10 lbs. Pork butts
5 lbs. game meat (venison, moose, bear)
4 Tbs. salt
2 Tbs. Black pepper
1- 1/2 Tbs. Ground caraway
1- 1/2 Tbs. Ground coriander
1- 1/2 Tbs. Mace
1- 1/2 quarts ice water
2 Cups Soya Protein concentrate

Grind all meat through a coarse plate. Add ice water then spices mix. Refrigerate overnight.
Stuff into natural hog casings. Freeze keeps for 1 year
