Hi: i am looking for a good pepperoni recipe for venison.i have made in the past from a premix from "canada compound" here in wpg. but it just isn't spicey enough lacking anise and pepper.if anyone has a time tested recipe they would like to share let me know.most do call for ground BEEF instead of pork.
 
Here is what I do, seems simple but its the drying that takes time and care. drying temp should be in the 40-50's with a humidity of 70%

as far as spice mixture you can adjust them to your likes.

Pepperoni

7 Lbs. Pork
3 Lbs. Beef or Venison
3 Tbs. salt
2 tsp. prauge # 2
3 Tbs. Sweet Paprika
2 Tbs. Cayenne pepper
2 Tbs. Red pepper flakes
1 Tbs. Anise seed, ground
1 Tbs. Sugar
½ tsp. Ascorbic acid
½ tsp. Fennel seed, ground
1 tsp. garlic powder
1 cup red wine.

Grind meats through a fine plate. Grind spices together and mix into meat. Stuff into hog casings. Hang to dry for 6-8 weeks @ 3-10 degrees C.
