Hi, I'm looking to build an M40 using a Remington 700 SPS varmint with a 26" heavy contour barrel chambered in .308 and a McMillan A5 stock, with a Swarovski Z5 3.5-18x44 for now.

Are all 700 models compatible with the A5 stock?

If I understand you right? you are looking to build a "clone" with your barrel & receiver. When you order the stock, they will inlet it for your specific action & barrel contour.
 
I built four m40 sniper rifles using remington 40x 308 repeaters using McMillan m40 stocks. I used winchester
trigger guards. McMillan will inlet the stock for your rifle. Then you need a stock guy to glass it in to make
them Shoot. I just put together a 1968 vintage m70 winchester clip cut 308 heavy barrel. It is a few numbers
away from a real US military m70 308 sniper that was sold in America.
