Anyone been using their M-14 for hunting? I'm interested in hearing of your experience as I'm considering taking one of my Norc M14s deer hunting in October.

It's a .308. Use 165 grain hunting bullets.
"...a little heavy..." My real semi'd Winchester with the issue fibreglass stock isn't heavy. The lack of weight does cause a fair bit of muzzle jump though. Pity it's evil.
Shot a deer with mine 2 seasons ago. Used Federal Vital shok 150's. Worked fine. Did a lot of tramping through the bush, I recommend a tactical sling that allow you to carry out front and just lift and shoot. Shot the deer from a straw bail blind after a leisurely sit.
The only problem I see with hunting with your Norinco M14S is levering those flush 5-shot magazines out. No one is going to rat on you to the fish cops about unsportsmanlike high-capacity military (yada yada yada) .... if they see you emerge from the bush with one of them on the gun.
I used the 5 round flush mag. Didn't want to have some Conservation Officer press extra hard and have a 6th round enter the mag and get arrested for a prohibited magazine. I found the flash suppressor made sounds as it scraped against anything like grass.
Yeah, they are noisy beasts. I mostly stalk hunt, so I did some mods to it to hush it. The front sling loop, and rear sling hook were both welded. Biggest change I can remember.
