What do you do if the pistol you want has a mag that accepts more than 11 cartridges? Just not buy it or is there another method to comply with Cdn. rules?

Sometimes firearms are sold without any magazine for this very reason.

If you are ever in doubt about a magazine's capacity you can disassemble it, take it home disassembled, and keep it disassembled until the magazine can be permanently modified to meet the law. Any gunsmith will be able to do this modification for you.
 
Ij you are buying a handgun in Canada and it takes more than 10 rounds, the seller is the one that has to fix this, if it is a dealer.
personal seller? make him replace or get you a nother mag, or discount
the gun the price of a mag.
Some mags are priced from 30.00 to 100.00, so check that out.
Depending on where you live , taking ai apart may not save your butt.

haven't decided yet. Probably a 9mm or 45, but many of the ones I check on manufacturers website have 17 or even more mags, so I didn't know if there was some way to still get a pistol you like but put a 11 round mag in its place. (Can u tell I'm new to this?)

If your talking Glock, they make 17 round mags. Luckily California has a 10 limit law, so we end up with those mags with brand new guns. If you want new 17 rounders, buy them already pinned to 10 off the EE. They are alot easier to load.
 
You are looking on US sites, I presume. In Canada you can only legally purchase 10 round or less mags for semi-autos.

"...manufacturers website..." They list their products as they come out of their factory, mostly for the U.S. market(not all States allow more than 10 either.).
Like tiriaq says, Canadian retailers sell 'em with a max mag capacity of 10. So don't worry about it.
Assuming you have the RPAL(some shops won't let you handle any handgun without it. Stupid nits that they are.), go try a few handguns on for size. A handgun must fit your hand to be able to shoot it well. The cartridge it shoots doesn't matter.
You will have to join a club to shoot. Even though there's no law that says that. It's not a bad thing. You'll meet some great people who will bend over backwards to help you(including letting you shoot their firearms. Most shooters are just like that.) and it'll open doors to other things. Like invitations to go hunting or assorted matches.
