AK is way easier to carry I can tell it to you as a person carried both for awhile. The reason they have SKS is probably because they couldn't get an AK or they prefer power of 7.62 cartridge to 5.45 one.
 
Mausers, Lee-Enfields, many other older firearms have been used in recent conflicts. Rebels, historically, don't care what the actual thing is; as long as it shoots, it's all good. In the case of Ukraine, it just so happens that there's a bunch of SKS scattered about.
 
That salt mine is in Soldar (this is east of Slovyansk and North of Donetsk) it has changed hands few time during this conflict
 
Terrorists did not get to that stash, it was really heavily guarded. Now when u see an sks with no bayo on terrorist shoulder it means it's civil version for hunters and shooters. When it has bayo it's military version and I have no idea where did they get it as Russia supplies terrorists with very modern weapon. Probably from some paramilitary state guard services.
P.S. I am blessed as I saw thousands of crates of surplus guns in Balakleya, where they were delivered from salt mines to be serviced and the either sold overseas or deactivated for souvenirs. I can describr the feeling, it's really overwhelming.

Apparently local militia was holding the mine for 2 weeks. They got to the part where there was tons of PTRDS anti tank rifles. However they could not get into the main storage since Western ukrainians had blown entrances.
