Meateater recipes

Looks good. I saved the rack of ribs off my last year's whitetail. He was a large buck and I've never seen more meat on a deer rib. Honestly 1/2" of meat between the ribs. I will try this recipe on them.
 
My family always like the deer ribs and I have to admit there isn't a lot of meat compare other part of the animal but the ribs section is always tasty and thanks for sharing the recipe and pic.
 
i tried the recipe for his meat loaf. man let me tell you it was killer. by far the best meat loaf ive ever had. layer meat, with sauteed onions and wilted spinach, cheese, then top with meat again. meat mix i used 2lb venison and 1lb of bacon. among whatever other ingredients he uses in it. i made three and froze the other two. i should make some more haha.
 
Been wanting to try that recipie since I picked up his book last year. Unfortunately no deer for me last year. Suppose I'll have to drool over your pic until next fall ;). Looks like they turned out great.

Just had it tonight, worst meatloaf I have had, and I am a big fan of meatloaf. Way too much spice which killed the taste of the deer meat. Going back to my old basic recipe where I can actually taste the deer meat.
 
I do something very similar, but instead of the pressure cooker, I simmer them for a few hours. ALso, my mother used to put a can of Coke/pepsi in the water. Claimed it tenderized them. Seems to work. The rest is the same - sauce/rub and BBQ.
 
I want to try that one too. Looks like a great use of a really ####ty cut of meat (anyone who has tried to get the meat out to add to the grind pile knows the hatred that develops for shanks)/

That's why I started keeping them whole, much easier when you have a few deer to butcher... If you're lazy, you can cook the whole shank instead of cutting them up.
