1 litre chicken stock
1 litre cold water
2 oxo beef cubes
I yellow onion diced
2 cloves garlic diced
2 halapeno peppers sliced
3 carrots diced
A handful black beans
Mushrooms, as much as u like
2 pounds stewing meat
1 teaspoon cayenne pepper
Salt & pepper to taste
Oregano
Olive oil
Fresh corn, minimum two maximum 4 cobs then strip them of cernels with knife
Flour, 5 ounces with water to make gravy
Caramelize onions garlic mushrooms
Add your carrots and all spices
In seperate frying pan with olive oil brown the meat, remove from heat, then add to saucepan with the onions garlic mushrooms
Add your water and stock
Bring to a quicker boil, then turn to simmer
Add your corn
Make your thickener with flour and water as if making gravy
40-45 minutes at medium heat, check to ensure its not burning.
The Secret to success here is just enuf thickening flour and just enuf hot spices that u enjoy but don't overdo the hot spices. This will stretch your stewing meat quite nicely..
