Yes, the wood on the II is noticably better, the engraving is game scene instead of scroll, and you get a silver oval shield on the butt stock for your initials.

Slightly upgraded wood....after that yo will see EELL guns for thousands more. It is all in the graving......the 687SPII I saw had what looked like a scene that was molded then finished. My 687 has an engraving on the sides but nowhere near the texture as the 687SPII

That's the only difference. Some of the higher grade 687s also have the dreaded side plates but the basic action is the same. New 12 gauge models have Optima bore while older ones and the 20 gauges are Mobile choked.
 
Even with the new guns aren't the sporting versions optima chokes with the field guns being mobile chokes?? I could be wrong on that the website will let you know.
4100011661 the 687 gold peigeion 11 has deep relief engraving while the eell has fine english scroll in a floral pattern. I can't remember the other engraving patterns but that is why there is so much texture in the gp11.
