What would you like to know? I shoot mostly trap but dabble in skeet too.
Lots of info on the site here.
From what I've read you should really try before you buy. I've had an opportunity to shoot Mossberg, Caesar Guerini, and Beretta over/unders. I really liked the Beretta and the Caesar. Only one of those is in my price range, lol. I shoot left but I was wondering how important cast was since I'm just learning and LH guns are more difficult to find. I've been able to break clays with RH guns. I'm also looking at good condition used and there are way more used RH options.
 
Most non-adjustable stocks have no or neutral cast, most newer semi autos have shim and cast inserts to get the fit you need or if your set on a over /under
You might want to look at Turkish shotguns most new ones have very adjustable stocks are unless your planing on shooting tens of thousands of rounds they all seem about the same quality wise, again just my opinion

I shoot a Catma 505 for skeet and other member uses a huglu and another shoots trap with a Canuck.
One thing my catma is rh only, with the grip and palm swell, not sure If they has LH models.
