Remove duck breast from bone, cut into thin slices, coat with shake and bake, cook at 350 for 12 mins... YUMMY!!!

Very nice! But, you shoulda picked it instead of skinning it...then you could've stuffed it and baked it until the skin is nice and crispy. Yummmmmy! :D
 
I wish I knew how to skin a duck so cleanly to pull out only the bits I want.

What bits do you want? I run a sharp knife from the anus to the neck, peel back the skin (sometimes need the knife sometimes it will pull free) Then slice the brest away from the center breast bone... done. The legs stay with the carcass but if you wish to keep going, it's not too dificult.
 
I got one yesterday I jumped out of a ditch at a potato field and when she plucked it my wife was convinced I shot it twice it was so full of holes.

"What did you shoot this with?" she asked.

"12 gauge, 2 3/4-inch #3 shot, the same as usual," I replied.

She packaged it and froze it labelled "Mallard collander."

What really choked me up was that I had actually shot two mallards and they fell on the other side of the deep ditch so that I had to walk 100 yards to the other end to cross it to the other field and walk back and while I was at the other end an eagle picked one up.
