I'm just in the process of setting up my Rem 700 5r .308 and I am looking for some advice. The scope I'm leaning towards is the Bushnell Elite Tactical 6-24x50 FFP G2DMR (ET6245FG). I like that it's FFP, I like the reticle, I like the magnification range. I just haven't had too much time looking through this scope outside of well lit stores. It will mostly be used for target shooting, but I will also be hunting with it (deer & moose mostly). What is the glass like in non-ideal conditions?

Now on to mounting it. I really like Seekins, and I'm pretty sure I'm going to go for a 20MOA base. My main concern is that there doesn't seem to be any Seekins dealers anywhere near where I live, so what height rings should I be looking for? Will mediums work? or will I need something higher?

20 MOA base is good.
I have Burris XTR low rings on my Savage using a scope with a 50mm bell but on my Rem 700 I have Trijicon medium for a 50mm bell scope. It all depends on the dimensions of the scope and how tight you want it to be. My XTR rings would have been fine on the Remington except the magnification ring on the scope in those rings is a little larger than the mag ring on the other scope so it was a little too tight to the back of the rail with the scope forward enough for proper eye relief.
I would say medium will work for sure but you may be able to get away with low. Hard to say for sure unless you try the low ones and check the clearance.

I would personally avoid the Bushnell scope, I had an Elite 6500 2.5-16 and was not impressed at all with the glass. I would look at the Sightron SIII 6-24x50 or the S-Tac 2.5-17x56. Sightron glass is noticeably better than Bushnell and the turrets are much better as well and the price isn't very much more.

The 2.5-17 would also make a much better hunting scope with the 2.5 magnification on the low end.
One of my buddies just bought one for his 308 and he seems really happy with it. I'll know how it is after I go shooting with him on Thursday.

Good luck
