First of all I am by no means an expert but I can completely disassemble and reassemble my gun and have a decent understanding of the internals and what they do.

1). Mine is a u.s. Gun. How can I find out when it was manufactured

I'm going to install a srt kit For creep issues

2). Has anyone tried trimming some coils off hammer spring to reduce pull weight
3). Will a lighter sear spring have any affect on trigger pull weight
4). If i want to purchase a lighter set of springs is there a kit with multiple weight springs
5). What parts should be polished to lessen pull and smooth it out? I assume trigger bar, sear, hammer. Any other contact points I should do?
6). What Polish and or stone should be used.
 
The srt kit won't have any effect on the creep. You can order different springs online via wolff. If you really want an amazing trigger job, I highly recommend that you send your Sig to MD charlton. He can do everything that the custom shop offer. They worked on my xfive and the trigger job is simply ridiculous.

4). If i want to purchase a lighter set of springs is there a kit with multiple weight springs Wolff has a kit with multiple. Check brownells, they ship here

I've polished internal parts with flitz and a buffing wheel on a dremel. I strongly recommend NOT using a stone of any sort, they can remove too much material and make your gun incredibly unsafe. All polishing is going to do is speed up the natural wear process.
