I guess the reason I am not satisfied with my SKS is the stock. Im sure it is the same all the way around for these as there is dents/dings and scratches on all of them. Im either gonna do a massive re-finish to it or buy some synthetic stocks and replace the wood.

I wouldnt say that, I got the 1950 from EPPS they said nobody wanted it because the barrel wasnt chrome lined.

Not the perfect gun for hunting, and where I live the largest caliber allowed is .270
For moose though I would use my SVT, I have a nice Bushnell Elite 4200 scope for it; but I have to win the draw first, the hardest part or scrape $3000+ and hire an outfitter up north.

PS:
if you want to fully restore your stock, after stripping it down of shellac and cleaning, you should impregnate it with creosote (an oily product used to preserve telegraph poles and railroad ties) as originally done by the soviets (most noticeble smell when you remove the butt plate); this is the reason for the blotchy finish on the stock; the soviets didn't use BLO or tung oil to impregnate the wood on military rifles, only creosote.
