Hunting preserves are uncommon in Canada. Not much need to pay to shoot on private land when there are free wild birds outside. However, having predictable (and tasty) birds does make the expense worthwhile.
There was a thread a few months ago about a guy who helped a bison rancher kill some yearings. Some provinces take a dim view of fenced-in hunting - not fair chase and therefore unethical to even call it 'hunting'. That said, a person who wants to can find boar, bison, exotic deer and elk opportunities for a price.
Have you tried googling for hunting preserves, shooting preserves, or pheasents, hatcheries etc?
