Anyone have a good recipe or instructions for making pickled eggs. I want to make some. Never done it. My uncle has a "recipe", I'll have to ask him....

unless of course you all have one to share.;)

Ya came to the right place!

Basic pickled eggs

All depends on how much you want to make .. but

For a 1.5 litre mason jar

1 dozen eggs , boiled and peeled

Put eggs in jar, add white vinegar until half full then top it off with water. Will be ready within a week! Store in the fridge.

If you like spice, hot, ect. , just add some garlic cloves, hot peppers whta have you. I found most people like it basic.

note* racoons like it too and can get the top off .. store well! LOL

1 doz. eggs boiled and peeled.
Put them in a big jar

I add lots of garlic, black peppercorns, onion, a sprig of dill.

If I make them hot 3-5 birds eye chilies get tossed in.

Substituting roasted red peppers or sun dried tomatoes for chilies is nice if you don't like the heat.

I top with pure white vineger.

This jar gets tossed into the stove at 200F till it warms up and then gets sealed.

I let mine sit in a cool dark place for 3 weeks.

A jar rarely lasts 2 days once opened. mmmmm

A guy at work loads a pickle jar with boiled eggs after the pickles are eaten, he just shoves the eggs in the juice and leaves them in the fridge for a week. Taste kinda mild and that green tinge on the egg is well, interesting.

Here's a good trick to boil your eggs so that they won't be overdone....

Place all your eggs in a large pot and cover with water, bring to a boil and let it boil for 1 minute. Then remove from heat and let your eggs sit in the pot for 30 minutes.

This will cook all your eggs thouroughly and will ensure that they don't get all rubbery.

Let us know how it turns out!!

I add dill and garlic, heat then store. pretty much what ceska does. I also like to add pepper flakes, baby onions, red, yellow and green peppers, and sometimes a half a habanero for the heat.

I knew I could count on fellow CGN'er to get me setup.

Now just gotta get me a jar, I think I'll have to make two batches....one plain and one with a concoction of the rest of the suggestions.

Thanks All.

P.S.

I think we should look into a CGN cookbook, and gather everyone's recipes and have them put into a bound book, and say donate some cash for the purchase of said cookbooks to a kids charity or something. Perhaps the family that Gatehouse helped out a while back, or another deserving/needing family.

you can always go buy a box of mason jars, a jug of vinegar and some of the fixings. Even in my neck of the woods where the grocery store charges corner store prices I can make up a batch for under 8 bucks.

PS save your pickle jars ;)

The cookbook idea is a good one. I'd be willing to compile the recipes, edit spelling, and organise them. I can even put up a website to sell the books in .pdf format, or on cd so people can have a copy. I think the procedes could be handled by a site admin, and we can submit names or charities and we can vote on where the money is spent.

Glad you like the idea, I was also thinking along the lines of a paper version, that you can have on hand while cooking, running back and forth to the 'puter to look at ingredients is a pain in the ....LOL

Anyway, I was willing to get the ball rolling on it, but hey I'd love to collaborate on the cookbook, and spellcheck edit, organize, etc...whatever we need.

Some thoughts I had were to have it in sections of type of food, and also credit the submitter, and include their avatars, perhaps have some CGN kids or talent submit some artwork for the cover, or for the pages inside, maybe a couple sponsors from the site would pitch in for some advertising in the book to help cover the cost of printing and binding. What do you guys think? Maybe we should create a whole section just for mommabear?! I keep flipping to her recipes on here anyway.

Let me know what you think, maybe we should start a new thread/poll for interest in a CGN cookbook.

Pm me if you want.

I love cookbooks! and the more cooperation the merrier! I can see this coming together!

If your impatient use any of the above then place some of the pickling mixture in a pressure cooker and place hard boiled eggs in rack above and pressure cook 10 min also works well for pickeled weiners.Enjoy immediately or store in pickling solution to age. Learned this at a university pub, made a fortune not having to buy commercial products

One of my neighbours does Quail eggs man they take ages to peel enough to fill a jar. My Gran was a preserving goddess but my mum never bothered. I have done some commercial hen eggs myself but nothing is as good as your chook or goose eggs!

Dave,

the beauty of the .pdf is you can print a recipe as needed. We can print off a few hardcopies if you want, but I was thinking that less expenses means more $$ for whatever charity we decide to donate the money to. I can probably also database the recipes for those folks who love their pda's. we should ask an admin if they'd be willing to set up a gunnutz mail addy for this, or if I should just go ahead and set up a cgnrecipe at gmail for this.

Hey you guys you left out the most important ingredient - ADD A BOTTLE OF BEER TO THE RECIPE. What's the matter with you guys anyhow????
Also can add a couple of tablespoons of pickling spice that you can pickup at any good grocery store in the spice section. These will cause the surface of the eggs to turn a light brown colour so don't be concerned.

Remember that when you attend any function at which Wendy Cukier is speaking, take along a half dozen pickled eggs for munching. That way when you want to hear from an a**hole, you will have an option, Wendy or your rear porch.
