What's the best finish for covering a stainless gun? Guys are going with powder coating but I have seen some ugly "tremclad" looking jobs. Anybody use Gun-Kote from brownells? Any suggestions appreciated.

I wouldn't recommend powdercoating. It's too thick, and you'll need to steer clear of all mating surfaces, or else it will flake off.
There are a number of firearms specific finishes that work MUCH better than powercoat. Ie: GunKote (I love it!), Duracoat, and Armacoat.

I had one gun powder coated. And several GunKoted. Next one will be GunKote again.
I would use powder coating where something is exposed to lots of water and neglect. It's effective but it's thick, it looks like housepaint.
Properly applied, I think powder coating might have a slight edge in durability; however, it's possible to touch-up GunKote.

I think they turned out good.
here is the shotgun we did. The owner uses it every hunting season and the engraving would rust. We did it over 2 years ago and he's never had any problems with it.

Gun Kote is extremely durable but like any finish..it will scratch off if you work at it.
I stopped by the K&G booth at shot and the owners had a shotgun on display they refinished the stocks in using their air cured finish. It was bright orange and they had been kicking it across the floor trying to knock the finish off. The stocks were full of boot marks..but the finish was still on it.
I've used it on over 50 rifles and love it.

You can find a lot of references on the Internet and Alberta Tactical Rifle, seen regularly on GN, will coat firearms using this product.
