When I install the grip, careful not to bend the safety detent spring - the safety switch no longer turns- like its jammed, with alot of resistance. I put the original back on and its fine - what could be causing this?

Anyone? It seems like the hole that the spring is nested in (in the grip) is 'wider' than the almost cylindrical one of the magpul grip - I'm wondering if the spring is being bent, and not compressing correctly. Has anyone else experienced this, or something similar?

Check the depth of the spring hole in the grip and compare it to the factory grip.

MOE spring hole depth will be shallower.

I removed a couple of coils from the spring and re-installed.
Worked like a charm and safety no longer has only one position (stuck).

I had this isue and can't remember what I did , was something to do with the screw length on the Magpul, think you have to use the original screw / bolt.

It ended up working but took a little investigation to figure it out.

It's a Norinco? ;) Seriously, the specs on Norcs are different, so in almost all instances some modification to either the grip (or spring) is necessitated. Same goes for replacing the hand guards with Magpul ones. Welcome to "barn-spec".
