Rem 700 in .300 WM

I have decided to round out my hunting arsenal with a .300 winmag. It will fulfill my large game requirement quite nicely (better for moose than my semi .308). Now I am set on the chambering and also the action hence the name of the post. What I want to find out is the different types of the Rem 700 being produced, pros/cons of different setups. I see there is a 'police' version out there, what else should I look at or consider doing? Some things I want is a synthetic stock and a heavy barrel. I know it is an out of the box performer but can I add a trigger job to put it in the next level? Is it needed? Excuse me in advance if I am asking a question that has been asked before.
 
I have an older 700 BDL in .300 WM. By older I mean the year before Remington came out with the detachable magazine. On one hand the detachable mag would be nice, on the other hand with the internal mag you will never lose the magazine.
Remingtons come with a "lawyer safe trigger", they can be tuned relative cheap. For a hunting rifle 3.5-5 lbs would not be too heavy. I wouldn't go much lighter. You don't always have time to take your gloves off to shoot.
 
I don't mind the extra barrel weight, I hunt with my stock Norinco m14 (I don't even take out the cleaning gear in the butt) and I think loaded with 5 rounds and the shorty clip it is around 10 lbs? I want the heavy barrel so that I have the option for more varied shooting (ie target or when I want to play sniper with gophers) though it's primary use will be to put meat in my freezer. In terms of tuning the trigger group a 4.5 lb trigger pull is my preference for an all around setting. I don't think I would want to try a lighter weight. I will most likely add a Harris bipod as part of it's permanent configuration. I haven't decided on optics yet but will probably go Leupold in a 2-9 power or similar. I would also for now not be taking any shots over 500 meters (until I get more practice in) as this is the limit of my skill so far.
