What is the availability like for Rem 788 stocks? I have my eye on one for my daughter, but I'd need to chop the stock to fit her, and I'm just thinking that if she grows much I'll need to either add some length to the stock in the future or source another stock, so I figured I'd inquire about how hard it is to find stocks for these rifles.

And they pop up on the EE from time to time.

My 788 carbine in 7mm-08, acquired ~ 30 yrs ago, came with a well used dog of a factory stock. I replaced it with a vintage Ramline synthetic [back when they came with a Pachmayr decelerator recoil pad installed] and it shot so well just as it dropped in I never did anything further with it. That bad factory stock went sideways along the way, probably in a house move.

Awhile back was able to score another factory stock off the EE for it, if I ever decide to put it back into 'wood'.

I can not help you on current availability - likely better to get one first, before cutting the one that you have now. Has been many decades since I cut one - that one was birch wood, or possibly beech wood - very "whitish" wood under that spray-on Remington finish - I suspect it was birch - would not take a stain hardly at all in the hard places. An acquaintance tells me that some were made with walnut stocks - maybe you get luckY?
 
As you probably know, you do not want a stock for "a" Remington 788 - was several made - all different size of actions - so I presume the inletting was different among them - there was 44 Magnum, 30-30 Win, 308 Win (same as 243 Win?), also .222 Rem sizes - maybe more that I do not know about. Magazines were different for each as well.
 
Be careful with 788 stock selections when buying used.
What they called short and long action is different than normal.
Boyds has the caliber attached to the stock at the bottom of the page.
Choose your caliber in the customization menu.
Pay close, very close attention to the distance between the action screws
I have several so I know.
I would cut yours and buy a Boyds later when she's grown.
There were tow types of stocks walnut and Beech
Whne you cut it, you will probably have to sand it down and refinish it.
Beech is tough to stain and finish.
I use Tru-oil over stain on the beech stocks.
Walnut I just use Tru-oil
Here's video on one that was refinished.
I use Lee Valley Dark Walnut stain on the beech ones with a Tru-oil top.
They turn out very well.
