What mag capacity will be available in Canada?

I've seen 25, 30, and 10 advertised.

If 30 is the available mag size, how did S&W get around that being as the rifle is restricted?

No one will know until the RCMP has done it's reviews and the dealers start importing them, as to magazine limitation it only applies to center fire semi autos.
