Fit and finish appear to be top-notch. Action design -

Excluding the Sako A7 as I have never handled, I would buy a Sako in any model current or past rather than a Sauer 101 or 100.
I was not impressed with the handling and cycling of the Sauer 101 or 100. I would buy a Tikka before these models.
The Sauer 200 or 202 is another beast all together and would suggest the extra time and a bigger piggy bank to save up for a new/used rifle.
Just my thoughts.

Sauer 200/202 are discontinued. Replacing them is model 404. Which is overpriced junk.
Don't bother with Sauer. Sad but true.
For 101 specifically, this is what Sauer thinks as "proper bedding", are you ready accept that in a over $2K rifle?
Aftermarket stocks, parts - zero.
Receiver is alloy. If your optics start to shift blame that.
Bolt locks on barrel directly. Would be neat if not junk stocks, bedding and alloy as a base for scope. But with all that it is just "can't really re-barrel me at a decent price" type of a deal.
Overall for the price its just worst deal around. Once it came out, it didn't sell, so Sauer made model 100 which is even more basic and cost reduced. But at least 100 is half the price of 101.

I will add that they have pressed in barrels not threaded.
I have briefly owned a 202, then a classic XT 101 and finally a used 100. All 3 were moa but I felt the 101 and 202 were far overpriced and their safeties were cumbersome. On the plus side they easily sold for the original price I paid for them. I felt the entry level 100 was a much better buy. Something was lacking though-it was still not "the one". I bought a Kimber Hunter and will never look back at Sauer. The Kimber is a one-holer, lighter, trimmer and far more agile. There is an approx. price difference of $700 between the Sauer 101 Classic XT and Kimber Hunter and not warranted imho. (Just one nutz opinion)

Sauer is Mercedes, Sako is Volvo.
Take your pick. I own few Sauers, they are 1/2 MOA rifles with my hand loads. I also owned Sako in 243 and it was shooting one hole.
Sauers have smoother action in my opinion.

I had Sauer 202 Jagd with heavy barrel 1:12 twist. It shot 220gr Noslers into one hole on 200 meters.
Then I had Sauer 90 in 375 H&H. I load those hot and have the rifle zeroed at 300m, it shoots 1 MOA, but its me because the Smith and Bender scope is 1-6x, so you don't see a little target at 300m, I mean bull eye.
Then I had beautiful 202 in 338 WM but I never shot her.
100 years of brand history means nothing iа right now they cheapen out to make a better profit margin under parent company management.
Was Sauer a top notch - no argument. If you can get Sauer 200 or older, yes, absolutely. Does Sauer stands up to its name in the last 5-10 year? Hell no.
Sauer 404, top of the line modern Sauer:
8x57, not even magnum. These are some German engineering and materials for you.
Look at Sauer 303 - totally failed, engineered by incompetent people driven my marketing ppl. Few even know it exists.
Sauer 101 - released 2012. How many did you see around? Compare to Tikka, an tiny update comes out - people queue to pre-order in any fit finish available.
Check Sauer 100 vs Sauer 101, think for yourself if they bother to make 100 if 101 was a decent rifle. While Sako 85 with bad ejection sells every year, over and over again and people are looking for it.
