If I was to buy a Remington 1187 or equivalent and install a 2 shot extension (making it over 5 rounds in the mag) is there a plug I can install to make it legal again?

Reason I ask is because I love the look when the tube almost matches the barrel length (18" barrel). I thought of a short barrel option with the 1 shot extension (14" barrel), but that would then make the shotgun restricted.

Cheers

It needs to be a "permanent" plug. I typically rivet a section of arrow shaft that's the correct length into the end of the mag tube extension. If you search the Black and green shotgun forum you'll find a few discussions about it.

You need to permanently plug the extension to hold no more than 5 rounds of the shell the firearm is designed for.

If your's is 3" then should not be holding any more than five 3" shells.

And that's the firearms act however under the hunting regulations you can not hold more than 3 rounds of shells in total while you are hunting in Ontario so it is up to you to decide how you want to pin your extended mag if you use your shotgun for hunting or when in the bush and if yours hold more than 3 rounds in total it is up to you to convince the CO than you confront you are not hunting.
