Hey guys
I just bought one of those Mossberg 500's from cabelas' with the 28 inch fixed modified choke, and 18.5 inch cylinder barrel. The 18.5 inch barrel will only be firing slugs, so that is not an issue. I actually wanted a fixed choke because then I would be able to aquaint myself with the pattern.
For turkeys I was thinking that BB would be a good choice, and I was thinkin 7.5 for grouse; any thoughts otherwise?

Assuming you are in Ontario you may only use #4,5,6 for turkeys, 7.5's will work fine for grouse. Because you are using a modified choke I would suggest using one of the new Hi-Density shells for turkey as these are quite hard and thus need less choke for a tight pattern. Limiting yourself to about 30 yards for Turkey is also a good idea. Hope you enjoy your new Scattergun.
 
Typically, turkeys are head shot and small shot sizes are used to increase pattern density. I prefer #6 for turkeys personally.
 
I actually live in B.C. Right in the middle of the East Kooteneys. It's legal to use any shot size in this province, but I did note that Remingtons turkey specific loads are in #4,5,&6.
