Simple Partridge Recipe?

Hey guys, about to cook up some partridge for the first time, Thawed out 2 full breasts last night,

I heard of one recipe a few times where you take the breast slice it almost in half spread cream cheese in it and add a pepper or a chili into the center and wrap the breast in bacon, I've never done it but it sounds simple enough,

Anyone tried something like this? More or so looking for some hints and tips such as cooking time and whatever else you think might be a good idea,

I just treat it like chicken - exactly like chicken in "how long to cook" etc.

So anything from shake and bake, to stuffed with ham/cheese, breaded and fried in a pan on the stove top.

In the woods they usually get a coating of beaten egg, a roll in some fish crisp and then into the frying pan.
 
Any time I've cooked prairie chicken as long as store chicken, it's been overcooked, either dry or tough. I'd throttle back the cook time. IIRC, it doesn't matter if you're game bird is slightly rare, as they don't live in a barn or cage sitting in their terds all day.
