So I just got a Luhr Jensen little chief electric smoker, top loader. It was $5 at a garage sale(thanks dad)...and it works. Any other gunnutz have one, and any tips on how many pans of wood chips I should use over the course of the day?? Unfortunately, the recipe book didnt come with it. I figure I'll go 4 pans of chips and hope for the best. I've used the oven, as well as my dehydrator for making jerky, this is my first batch with a smoker. Any and all thoughts appreciated. Thanks in advance:redface:

I have a True North smoker, which is very similar to the one that you have. I usually find that 2 or 3 pans of chips is enough, so you may find the smoke taste of 4 pans a little overpowering. Everyone's taste is different though, the best way to find what you like is to experiment a little bit. In my smoker it seems to take about 30 - 45 minutes for the chips to completely smoke.

I'm not sure how the rack system is in your smoker, but I've found that rotating the racks throughout the drying cycle helped make the jerky dry more consistently. It’s kind of fun, I’m sure you’ll enjoy the results.

I just got one not too long ago. I've done one batch of jerky, and some smoked lake trout. It's AWSOME!!

What Scott said about being TOO smokey is definately a possibility. On the jerky, I used 4 pans and it was perfect. The fish, I think I used 2 or 3.

I think after you play with it for a while, you will get it down to an art. The bright side is, you really can't 4uck anything up!!
