Hi guys, just started snaring hares, got one this morning and was wondering how i should handle the dressing in the frozen state ? Should i let it unfreeze then dress ? if yes, can i still re-freeze the meat after the dressing ? Or should i leave it frozen and dress it ?

Thank you !

I would thaw the rabbit very slowly in a fridge leaving the rabbit as cold as possible to dress the rabbit. As long as the meat doesn’t come to room temperature, I don’t see any problem with refreezing the meat. I’ve worked with nearly frozen deer meat and after deboning the meat and refreezing it. I have never had any problems...

Thank you Northman, the darn thing has been has been thawed, cleaned and portionned, i'm gonna refreeze it right now.

You can always use the tried an true Newfoundlander method. Just leave them frozen in the skin until you want to use them. The hide keps them clean and freezer burn free until use. No issues for several months for sure. My Father in Law has been doing this his whole life. The only drawback from my perpective is you have to clean on every time you want to eat it. I prefer to make a mess once and have a bunch ready to go when you want them.

redmist25 has it right, I've always left snared rabbits frozen till needed. Take one out, hang it to thaw and skin and clean it for the pot.

Funny thing is, my wife has been known to cut their nails (damn they are sharp!) and has even put foil "booties" on them... Both actions were a result of scraping herself on rabbit nails when digging through the freezer...

Cheers
Jay

I found a really easy way to skin them-slit up the back, reach in and grasp the body with one hand while pulling the skin down over to the paws and head with the other , then clipping them off with shears-takes about 2 minutes. Then I just split them up the belly, remove guts, rinse and split again into quarters
